how can things that so closely resemble little turds be so good.

i just ate this for brunch.
i’m not one to openly gush over chocolate but i’ve decided it’s about time i fess up to my undying love. after my disastrous experience with stomach flu, this week was pretty stressful as i tried to get back into the swing of things at work. i think chocolate played a big part in making it at all possible. i’ve always known that i really really liked chocolate but this week was the first time i noticed how it can alter my mood in a matter of minutes. [maybe i have really low blood sugar. hm.. come to think of it, i always get hyper after lunch, too.....] well, in any case, i have been noticing these changes a lot more.
last night i watched Chocolate Confidential, a documentary on chocolate. [might i also add that i love documentaries. CBC shows some great ones].
Chloe Doutre-Roussel was interviewed in this documentary. she is one interesting lady. she is a fascinating chocolate conoisseur, amongst other things. in the documentary she did some chocolate tastings and claimed to be able to smell “fresh earth” and “the sweat of animals” in the cocoa beans used in the chocolate.haha. she made me want to eat chocolate for breakfast, lunch and dinner, and travel the world in search of the perfect cocoa bean.
she had some good tips on spotting the best chocolate. no Mars Bars or M&M’s for her. apparently any chocolate with less than 20% cocoa content is crap. white “chocolate” has a big whopping ZERO %. plain chocolate may have 62-85%. 55% is fine for chocolate with nuts “since the nuts add a bitterness that needs more sugar to compensate”. chocolate that smells too much like vanilla and sugar will be too sweet. shiny, smoothe chocolate that makes crisp sounds when breaking is a good sign that the chocolate is well-made.
while i do appreciate high quality chocolate and enjoy dark chocolate, truffles, etc., i would be lying if i said that a KitKat bar cannot change my day. i had this friend who knew about my ultimate love for KitKat’s and every time he saw me, he’d cleverly make one appear for me to enjoy. needless to say, he’s always been one of my favourites.
i used to think that my love for chocolate [and some candies] made me somewhat childish. i’ve been told that my eyes widen and i get this trying-not-to-be-excited expression on my face when i’m presented with chocolate-anything to enjoy. well, no more. here it is: I LOVE CHOCOLATE.
maybe i should move to switzerland. the swiss apparently eat about double the amount of chocolate that north americans do. more than 22 lbs. per year, at that! and studies have shown that chocolate [at least flavanol-rich chocolate] is good for you and your heart.
maybe i’ll move to south america and live amongst the cacao trees and learn how to make my own chocolate. or i can just take a chocolate cooking class. or i can just go buy a KitKat.

from one of my favourite movies, Chocolat [because it's good, not because it's about chocolate.]
